And the concentration of vitamins, micro- and macroelements is impressive. The fresh root contains: vitamins of groups E, K and C, most of the vitamin B spectrum; copper, iron, potassium, calcium, magnesium, phosphorus, zinc, manganese and selenium; essential oils and essential amino acids. However, the main active ingredient of ginger, responsible for the burning taste and characteristic tart smell, is gingerol, a vegetable alkaloid with anti—inflammatory and analgesic properties.
