Overview
Fermented rye malt, which is also sometimes called stewed or red, is obtained from sprouted rye grain, which undergoes fermentation, drying and subsequent grinding. Fermentation is the process of aging (languishing) sprouted rye grain under the influence of high temperatures. During high-temperature processing, intensive formation of melanoids begins inside the malt, which give the malt a red-brown color and a specific taste and aroma. Fermented rye malt is used in baking to improve the color of rye bread – the crumb gets a pleasant brownish-brown color, as well as a characteristic malt smell and taste. Rye malt is very rich in various trace elements and vitamins, which are almost indispensable for the health and proper functioning of the human body. Thus, the chemical composition of rye malt includes calcium, magnesium, selenium, manganese, phosphorus, vitamin E, B1, B2, B5, A, choline and others. Due to its composition, rye malt promotes the development and growth of muscle mass, activates protein metabolism, stimulates the digestive system, removes toxins and has a choleretic effect (calorizer). Therefore, it is recommended to use it for people with gastrointestinal diseases, but not in the acute stage, a tendency to form gallstones, anemia, diabetes, nervous system disorders, etc. Rye malt is contraindicated in people with chronic pancreatitis, acute gastritis, cholecystitis, gastric and duodenal ulcers.
