Lebanese Shanklish

Shanklish is a type of cheese made from cow's or sheep's milk in Levantine and Syrian cuisine.

It is cooked in the form of small balls, the surface of which is covered with dried thyme or pepper.

Shanklish is known for its intense taste, for which he received the nickname "Syrian Roquefort". The longer the aging, the stronger its taste and the tougher the texture.

Shanklish is considered one of the oldest cheeses in the world.
