Overview

Lush and creamy, with a mild, earthy flavor, eggplant has the most velvety texture in the vegetable family. It's high in healthy fiber. We love it sliced, brushed with olive oil and salt, and grilled or roasted. We also love it breaded, fried and smothered in fried onions. Come to think of it, we just plain love it. Eggplant is a perennial plant from the Solanaceae family, so it is a relative of tomatoes, potatoes and peppers (vegetable and spicy). In the botanical sense, the eggplant fruit is a berry, although in cooking it is a vegetable. Its weight ranges from 30 grams to 2 kilograms. Regardless of the variety, all eggplants have only a description of the pulp in common: dense or not too dense, with small seeds and a peculiar taste. The taste of eggplant is delicate, soft and slightly sweet – close to zucchini and zucchini, but still more piquant, thanks to the pleasant bitterness.
