For rough sharpening use of seriously damaged knives with a blunt blade use the first and the second slots.The third slot is used for the final stage of sharpening to eliminate burrs on the knife-edge and to provide a smooth, polished edge on the blade. The sharpener cannot be washed in a dishwasher or soaked in water. After using the sharpener wipe it with a cloth towel.
